Kefir production all starts with kefir grains, which despite their name, aren’t actually a type of cereal grains like we would think. Kefir grains are small rubbery bits that have a gummy bear-like texture and are used to start the fermentation process when making milk kefir.
These rubbery bits are actually masses of live probiotic bacteria. The bits are responsible for creating more of the healthy gut bacteria we want.

● How healthy is kefir?
Yogurt is the best known probiotic food but kefir is actually a much more potent source. Kefir grains contain about 30 strains of bacteria and yeasts, making it a very rich and diverse probiotic source.

● When should you drink Kefir?
Remember that people with candidiasis lack milk-digesting bacteria, so you may have to build up your “tolerance” of kefir. Start with about four ounces in the morning on an empty stomach. Every second day, increase the amount until you are able to drink a full eight-ounce glass.

● What’s the nutritional value of kefir?
It contains high levels of vitamin B12, calcium, magnesium, vitamin K2, biotin, folate, enzymes and probiotics.

● What are the benefits of drinking kefir?
Boosts immunity, builds bone strength, potentially fights cancer, supports digestion, helps heal leaky gut and IBS, improves allergies, heals the skin, and improves lactose intolerance symptoms.

● What do you need to make Kefir? (0:55)
Kefir grains (1-5 tbsp per jar), mason jar, wooden spoon
Milk (1:43) grass fed raw milk – (my preference)

● How do I make Kefir?
Leave space at top of jar, cover with cloth or coffee filter and rubber band
Place in a dark dry location (3:05) room temp for 18-24 hrs
Time to strain your kefir (3:24) in stainless steel colander with stainless steel bowl underneath,
Scoop grains into new jar to start your next batch of kefir.
Pour remaining Kefir Milk into a glass jar, top with regular mason lid (4:25)
Let it sit for 18hrs for the kefir to separate, do not refrigerate until it separates.
Rinse the grains and reuse grains to repeat the process.
